Found this recipe in an old Mennonite cookbook. A perfect snack or have it for faspa. Growing up faspa was for Sunday supper and including buns, jam, pickles, cheese, and deli meat. Instead of buns, have some veggie rolls.
Ingredients:
- Tbsp spreadable Cream Cheese
- 1 Tbsp ranch dressing (either powder form or liquid)
- 1 ten inch tortilla
- 2 tbsp grated carrot
- 2 tbsp strips of pepper
- 2 tsp diced green onions
- 3 tbsp chopped broccoli
- 1/4 cup grated cheddar cheese
- Combine the cream cheese and dressing in a bowl, stir, and spread on a tortilla shell. Sprinkle on veggies and cheese, roll up tightly, and wrap with plastic wrap and chill.
If you want to change things up try these veggies:
- Cauliflower
- Grated Carrots
- Spinach Leaves
- Kohlrabi
- Peppers (Hot or Sweet)
- Green Onions
- Broccoli
Some tips: dicing up the veggies fine will make rolling up much easier and the presentation will be nicer. If you want to save time buy some pre flavored cream cheese.

I used kohlrabi, cherry tomatoes, cucumbers, sweet peppers, and feta cheese in my roll ups. 
For the cream cheese I used Garlic and Herb flavor.
