I grow many different types of potatoes. To grow potatoes one needs seed potatoes which can be bought at big box stores, greenhouses, or in Canada Eagle Seed Potatoes.
- Norlad: Early red skinned, white on the inside potatoes.
- Yukon Gold: Yellow skin and flesh.
- Russet: starchy, netted brown skin, and white on the inside.
- Russian Blue: Blue on the outside and inside.
- Amarosa: fingerling potato with a smooth bright red skin, and deep red flesh.
- Linzer Delikatess: they have yellow skin and are light yellow on the inside.
- Pink Fir Apple: these potatoes are huge and bizarre looking. They have pink skin and are white on the inside.

Potatoes are a very versatile vegetable and can be used many different ways. My favorite potato dish is fried potatoes and eggs. Boil some potatoes, let them cool than shred or cube them and put into a frying pan. Add some eggs and fry them up. Mmmm!
