Kohlrabi: The Alien Veggie

The veggie from space aka the alien veggie!  kohl·​ra·​bi | \ kōl-ˈrä-bē (Call rah bee). Its unique name is derived from the German word for cabbage (kohl) and turnip (rabi).

I love this veggie, it’s cool looking and tastes good.  One way to eat it is like an apple.  The peel is not edible so you need to peel it, which can be a pain.  So cut the kohlrabi into 4s or 8s and eat like an apple slice, just don’t eat the peel.  Some people like sprinkling a little salt and/or pepper on the kohlrabi. Another way to eat kohlrabi is to make a slaw.

Coleslaw Dressing

  • 2/3 cup mayo
    3 tablespoons vegetable oil
  • 1/3 cup white sugar
    1 tablespoon white vinegar
    1/2 teaspoon salt
  • 1 1/2 tablespoons lemon juice.
  • 1/2 teaspoon ground black pepper

Mix ingredients together and pour over 4 cups of veggies.

4 cups shredded or chopped veggies such as:

  • green or red cabbage
  • carrots
  • cucumbers
  • kohlrabi
  • broccoli stems
  • kale
