I grow 5 types of beets: white, yellow, chiogga, cylinder, and round red.  I love cylinder beets as they are easier to peel and to cut.  Chioggia beets flesh are very tender, mild, and sweet.  Chioggia beets are the sweetest, than red, yellow, and lastely white.  One thing to note if cooking all 4 beets in pot you’ll end up with an interesting color as red beets tend to bleed a lot.  Yellow, chioggia, and white beets do not bleed and therefor there is less mess.

Beans

There are many different varieties of beans, but I stick to bush snap beans.  I grow both yellow, green, and purple beans.  Beans are one of my least favorite vegetable to pick, they take hours to pick and because the plants are smaller I have to crawl along the rows to pick them.  At my markets I find people prefer yellow beans to green beans.  Purple beans will turn a light green when cooked.
