Asparagus! This is one vegetable I don’t grow. It can be grown from seeds or from root stock and is a perennial. If you want to grow asparagus, look for crowns(plants) instead of seed for an earlier harvest. Depending on how much you love asparagus plant between 10 to 50 crowns. Source
It gives 3 different colors of asparagus: white (which is blanched with soil or the stalks are covered with something), green, and purple. It takes 3 years for asparagus to be ready from seed to harvest. It can grow 7 inches in one day.
The reason I don’t grow asparagus is because I have a rental garden and I don’t feel comfortable putting perennials in a garden that I don’t own. I am slowly putting in perennials (put in 150 strawberry plants a month ago), but I also realize the land could be developed soon so…. My garden is in a really strange spot and it’s interesting it hasn’t been developed yet. I also don’t feel comfortable growing or harvesting asparagus. It isn’t hard, but it’s just something I don’t have an interest in learning. Considering I grow 60 different varieties of pumpkins and winter squash, that’s what I love and love learning about.
